Ingredients

  • Salmon fillet 5 oz
  • Asparagus 8 spears, trimmed
  • Cooked quinoa 3/4 cup
  • Olive oil 1 tbsp
  • Lemon 1/2, sliced
  • Garlic 2 cloves, minced
  • Salt and pepper to taste
  • Fresh dill 1 tbsp chopped (optional)

Steps

  1. 1 Preheat oven to 400°F. Line a sheet pan with parchment.
  2. 2 Place salmon and asparagus on sheet pan.
  3. 3 Drizzle with olive oil. Sprinkle garlic, salt, pepper. Top salmon with lemon slices.
  4. 4 Bake 12-15 minutes until salmon flakes and asparagus is tender.
  5. 5 Serve over quinoa. Top with fresh dill.
Tips

Use thicker salmon fillets (5+ oz) — thin ones overcook. Asparagus cooks fast — 12 minutes is enough.
