Ingredients
- Salmon fillet 5 oz
- Asparagus 8 spears, trimmed
- Cooked quinoa 3/4 cup
- Olive oil 1 tbsp
- Lemon 1/2, sliced
- Garlic 2 cloves, minced
- Salt and pepper to taste
- Fresh dill 1 tbsp chopped (optional)
Steps
- 1 Preheat oven to 400°F. Line a sheet pan with parchment.
- 2 Place salmon and asparagus on sheet pan.
- 3 Drizzle with olive oil. Sprinkle garlic, salt, pepper. Top salmon with lemon slices.
- 4 Bake 12-15 minutes until salmon flakes and asparagus is tender.
- 5 Serve over quinoa. Top with fresh dill.
Use thicker salmon fillets (5+ oz) — thin ones overcook. Asparagus cooks fast — 12 minutes is enough.
